Spicy Potato Pastry (Samosa Triangles)

Samosas are one of the most popular snack foods or appetizers in north India.  They can be stuffed with lamb or mixed vegetables, but as in this recipe are more commonly stuffed with potatoes.  Serve hot with Cilantro Chutney.

SKILL LEVEL 32 pastries
1 package frozen puff pastry sheets
4 medium potatoes (about 1-1/4 pounds)
1 tablespoon Mazola® Vegetable Oil
3/4 cup frozen peas, thawed
1 tablespoon Patak's® Mild Curry Paste
1 tablespoon finely chopped fresh green chilies, optional
1 teaspoon salt
1 tablespoon finely chopped fresh cilantro
Preheat oven to 400°F.

Thaw pastry sheets according to directions. 

Peel and boil potatoes until tender.  Coarsely mash and set aside.

Heat oil in a medium skillet on medium-high heat.  Add peas, curry paste and green chilies, if desired.  Cook for 2 minutes.  Remove from heat.

Add the cooked potatoes and sprinkle with salt and cilantro.  Mix well. Set aside.

Carefully separate the two pastry sheets.  Dust the counter with all-purpose flour and roll one pastry sheet to 12 x 12-inches.  Keep the other sheet covered with a towel to prevent drying.

Cut the rolled sheet into 16 squares.  Place about 1 tablespoon of potato mixture in the center of each square, fold one corner of the square over to make a triangle. 

Press the edges together sealing the triangles.  Stuff all 32 pastries.  Place triangles one-inch apart on ungreased baking sheets.

Bake for 20 to 25 minutes, until the tops are golden brown.

Cool 10 minutes.
