Shrimp Marsala

Fresh shrimp, mushrooms and Marsala wine make up the savoury goodness of this entrée.

SKILL LEVEL 4 servings
1 pound (500 g) uncooked, peeled and deveined colossal shrimp
2 tablespoons all-purpose flour
1 teaspoon snipped fresh parsley
1/4 teaspoon dried oregano, crumbled
1 tablespoon Mazola® Corn, Canola OR Vegetable Oil
5 ounces sliced fresh mushrooms
1/2 cup Marsala wine
Fresh parsley, snipped (optional)

Rinse shrimp; pat dry with paper towel.  Combine flour, 1 teaspoon parsley and oregano; sprinkle over shrimp, shaking off excess.

Heat a large skillet over medium-high heat.  Add oil and swirl to coat bottom of skillet.  When oil is hot, cook shrimp for 2 minutes. Turn shrimp over.

Add mushrooms and wine to skillet. Increase heat to high and cook for 5 to 7 minutes, stirring occasionally, until sauce has thickened to a consistency almost like melted caramels.

To serve, place shrimp on each of four plates; garnish with parsley.
