Ingredients
 
2 tablespoons Mazola® Corn, Canola OR Vegetable Oil
1 pound (about 4 cups) small red potatoes, sliced
4 cups cauliflower florets
1 tablespoon Patak's® Mild Curry Paste
1 can coconut milk
1 teaspoon salt
 
Instructions
 

Heat oil in a skillet and add potatoes; cook for 5 minutes.  Add cauliflower, and cook until potatoes and cauliflower are almost tender.  Add chickpeas and curry paste.  Add coconut milk and salt.  Cook for 5-10 minutes until tender.


Serve with naan bread or as a side dish.
