Mushroom Almond Rice Pilaf

Delicious with grilled fish or chicken.
4 to 6 servings
2 tablespoons Mazola® Corn, Canola OR Vegetable Oil
1-1/2 cups sliced mushrooms
1 cup chopped onion
2 cloves garlic, minced
1 cup uncooked white basmati rice
1-1/2 cups chicken OR vegetable broth
1/3 cup toasted slivered almonds
2 tablespoons chopped fresh parsley

Heat oil in a 2-1/2 to 3-quart saucepan over medium heat. Add mushrooms, onion and garlic; cook until tender, about 3 minutes. Stir in rice. Cook, stirring, 2 minutes.

Add broth. Bring to a boil. Reduce heat to low; cover, and simmer 20 minutes. Remove from heat (do not stir rice). Let stand 10 minutes.

Stir in almonds and parsley; serve immediately.
