Mixed Grain Mushroom Rice Pilaf

A hearty and filling side dish that can pair well with any meal.
Easy Serves
SKILL LEVEL 6 cups, 4-6 servings
1/2 cup millet
1/2 cup bulgur, coarse
1/2 cup long grain brown and wild rice mix
1 tablespoon Mazola® Canola Oil
1 small onion diced
8 ounces of mushrooms sliced
½ teaspoon fresh cracked pepper
2 teaspoons of dried thyme
4 cups mushroom broth or No Salt added Vegetable broth (1 carton)
1 tablespoon grated Parmesan
1 tablespoon butter
salt- season to taste

Using a large sauté pan with a tight fitting lid, heat over medium-high; add the grains and toast for 2 to 3 minutes. Remove from pan and set aside in a bowl.

Heat oil in same pan over medium heat, sauté onions and mushrooms for 6 minutes, add the thyme and pepper, continue to cook 1 minute. Add the grains back to the pan stir well, add broth and bring to a boil, stir and cover. 

Simmer over very low heat for 30 to 35 minutes, turn off heat and let sit covered for 10 minutes.  

If desired, for a creamy, risotto-like dish, stir in butter and Parmesan before serving.  Season with salt and pepper to taste.
