Fish Tacos with Mango Lime Salsa

Ingredients
 
Mango Lime Salsa
1 mango, diced
1 cup diced fresh tomato
1/3 cup chopped cilantro
1/4 cup diced, peeled & seeded cucumber
1 jalapeno pepper, seeded and finely chopped
1 green onion, chopped
1/2 cup canned OR frozen corn
1/2 cup canned black beans, rinsed and drained
Grated peel and juice from 1 lime (reserve 1/2 teaspoon juice for Topping Sauce)
1 tablespoon mango lime
2 teaspoons sugar
2 teaspoons cider vinegar
Topping Sauce, optional
1/2 cup mayonnaise
1/2 cup sour cream
1 teaspoon Kick'N chicken
1/4 teaspoon ground cumin seed
1/2 teaspoon lime juice
Fish Tacos
1 pound tilapia OR mahi mahi fillets
2 tablespoons Mazola® Corn, Canola OR Vegetable Oil
2 tablespoons Kick'N chicken
1/2 teaspoon ground cumin seed
8 corn tortillas
2 cups shredded lettuce OR cabbage, optional
 
 
 
 
Instructions
 

Combine all Mango Lime Salsa ingredients, mixing well.  Refrigerate until ready to serve.

Combine all Topping Sauce ingredients, mixing well.  Refrigerate until ready to serve.

Combine tilapia, oil and seasoning in a resealable plastic bag, tossing to coat.  Heat grill pan over Medium Direct heat.  Spray grill pan with grilling spray.  Add fish. Grill 6 to 8 minutes, turning once, until fish is cooked through and flakes easily.  Remove from grill.  Portion fish onto tortillas.  Top with lettuce, if desired, Mango Lime Salsa and Topping Sauce.
