Easy Chicken Cutlets

These versatile chicken cutlets go with most any side dish!

SKILL LEVEL 6 servings
1-1/2 pounds boneless skinless chicken breasts, pounded thin
1 egg, lightly beaten
1 cup seasoned dried bread crumbs
1/4 cup Mazola® Corn, Canola OR Vegetable Oil

Place chicken in a large bowl; add beaten egg and gently toss to coat.

Place bread crumbs in a large resealable bag. Add chicken, 1 piece at a time; shake to coat.

Heat oil in large skillet over medium-high heat. Cook chicken 8 to 10 minutes, turning once, or until cooked through. If desired serve with salsa OR a drizzle of chicken gravy garnished with chopped parsley.

In these days when everyone is trying to eat better we should have more recipes geared to baking in the oven and less of them to frying. I know your team posts a lot of recipes geared to baking but all of our doctors are now advising against any fried foods at all. I became type 2 diabetic after a MVA where I never lost the last weight I gained but now even my age works against me. I'm sure many other older clients are trying to do this as well. Maybe our profiles can be set up to ignore certain types of recipes but your IT staff would have to set it up.
