Tofu Burgers with Queso Fresco Lime Mayonnaise


Pressing the liquid from the block of tofu is a key step in creating nice firm tofu that will be easy to grill.

SKILL LEVEL 4 burgers
1 package (18 ounces) extra firm tofu
1/3 cup mayonnaise
1/4 cup crumbled quesco fresco
1 teaspoon lime juice
2 teaspoons chipotle seasoning
1/4 cup lime juice
3 tablespoons Mazola® Corn, Canola OR Vegetable Oil
2 tablespoons chipotle seasoning
Thinly sliced cucumbers and red onion
Leaf lettuce
4 sweet-style steak rolls OR hamburger buns

Wrap tofu in two layers of paper toweling followed with two layers of cloth toweling. Place a plate or platter on top of the wrapped tofu. Weigh down the plate with heavy objects such as cans of soup or small brick. Press tofu for at least an hour to remove excess liquid.

Combine mayonnaise, queso fresco, lime juice and  2 teaspoons seasoning in a small bowl and refrigerate until ready to serve. 

Combine lime juice, oil and 2 tablespoons seasoning in a small bowl.

Place vegetable grill pan on grill or cover grates with aluminum foil; preheat grill on high heat   Brush tofu with flavored oil.  Grill tofu slices Direct High heat, turning once, for 5 to 7 minutes or until browned and slightly crispy. Brush with flavored oil several times during grilling.

Place bun slices cut side down on grill. Grill until slightly browned and grill marks appear.

Place tofu slice on bun. Top with cucumbers, red onion and lettuce. Spread 1 to 2 tablespoons mayonnaise mixture on remaining bun slice and top 'burgers'.
