Blueberry Vinaigrette

Delicious on tossed greens and spectacular when you add sliced mango, more blueberries and goat cheese.  Add sliced chicken for a complete meal.

Ingredients
 
1/2 cup blueberries, fresh OR frozen
2 tablespoons red wine vinegar
1/4 cup Crown® Lily White® Corn Syrup
3/4 teaspoon ground mustard
1/2 cup Mazola® Corn, Canola OR Vegetable Oil
Salt and pepper to taste
 
 
Instructions
 

Combine blueberries, vinegar, corn syrup and mustard seed in food processor or blender. Blend until smooth.

Gradually add oil while mixing. Season with salt and pepper. Chill until ready to serve.
