Avocado Toast with Egg

Delicious and nutritious any time of the day!
1 serving
1 slice rye bread, slightly toasted
1 whole avocado, mashed
1 teaspoon cilantro, fresh, chopped
1/2 teaspoon lemon juice
1 whole tomato, fresh, diced
1 whole red onion, peeled, diced
2 each radishes, rinsed and sliced
1 whole egg, large
1/2 tablespoon Mazola® Corn, Canola OR Vegetable Oil
Associated Recipes:
in a small bowl mix the mashed avocado with lemon juice and cilantro.

Heat a small skillet over medium heat, add oil heat for 1 minute, add egg and cook and cook until done as desired.

Spread the avocado mixture on the toasted bread, sprinkle with tomatoes, radish and onion. Add your egg, season with salt and pepper.
