Apricot Ginger Barbecue Sauce

Sweet gingery glaze with hint of soy sauce.  Delicious brushed over chicken, pork chops, spareribs or salmon.

1 cup, approximately
1 cup apricot nectar
3/4 cup Beehive® OR Crown® Golden Syrup
2 tablespoons soy sauce
1-1/2 teaspoons ground ginger
2 to 3 drops hot pepper sauce
Associated Recipes:

Combine nectar, corn syrup, soy sauce, ginger, and pepper sauce in a 2-quart saucepan. Bring to boil over medium-high heat, stirring occasionally.

Reduce heat until just boiling; cook for about 10 minutes, stirring occasionally, until mixture is almost reduced by one half (about 1 cup sauce should remain). Cool.

Brush sauce on chicken, pork chops or ribs during last 5 to 10 minutes of grilling, turning frequently.
