Perfect in the summer when peaches are at their best.
Preheat oven to 400°F. Combine flour, cinnamon, baking powder, ginger, baking soda and salt in a large bowl. Mix butter, brown sugar and sugar in a medium size bowl until well blended. Add egg and vanilla extract. Stir in buttermilk and peaches.Add peach mixture to bowl with flour, stirring just until combined. Fill 2-1/2-inch greased or paper lined muffin cups 2/3 full. Bake for 15 to 18 minutes until muffins are browned and wooden pick inserted in center comes out clean.
