Grilled Steak Tacos with Corn and Black Beans

The Goods
  • 1 pound steak, top sirloin OR strip (about 3/4-inch thick)
  • 1 package or 3 tablespoons taco seasoning
  • 1 tablespoon Mazola® Corn, Canola OR Vegetable Oil
  • 1 cup frozen fajita style peppers and onions
  • 2 cups frozen corn
  • 1 can (14.5 ounces) black beans, rinsed and drained
  • Tortillas OR taco shells
  • Salsa and other toppings as desired

Only 20 minutes....and you can have a grilled steak taco with spicy vegetables.

Make Good is Easy

Rub 1 tablespoon taco seasoning over both sides of the steak.  Grill steak over direct medium heat for 10 to 12 minutes, turning once, until desired doneness.

Heat oil in a large skillet.  Add peppers and onions, corn, black beans, remaining package of taco seasoning and 1/2 cup water.  Cook for about 5 minutes until very hot and most of water has evaporated.

Slice steak into thin strips and portion into tortillas or taco shells.  Top with corn and beans and finish with salsa or other favorite toppings.

 

Recipe Tip:  To cook without grilling, rub steak as directed above.  Cut cross grain into thin strips, about 2 inches long.  Add steak to the hot oil in skillet and fry to desired doneness.  Remove from skillet.  Add peppers and onions, corn, black beans, remaining package of taco seasoning and 1/2 cup water.  Cook for about 5 minutes until very hot and most of water has evaporated.  Portion steak strips into tortillas.  Top with corn and beans and other toppings, as desired.
