Gluten-Free Peanut and Jelly Butter Waffles

The Goods
  • 1/3 cup butter OR margarine, melted
  • 1/4 cup peanut butter
  • 1-1/2 cups Fleischmann's® Corn Starch
  • 2 tablespoons sugar
  • 1 tablespoon Fleischmann's® Baking Powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon xanthan gum (optional)
  • 2 eggs
  • 3/4 cup buttermilk
  • 1/2 teaspoon pure vanilla extract
  • Jelly Syrup
  • 1/2 cup Crown® Lily White® Corn Syrup
  • 1/4 cup jam, jelly OR preserves
  • 1/2 teaspoon pure vanilla extract

Delicious waffles that use no expensive gluten-free flours!

Make Good is Easy

Blend together butter and peanut butter.  Stirin all remaining ingredients and let sit for 2 minutes.

Place 3/4 to 1-1/2 cups batter in a preheated waffle iron and bake to desired level of browning, about 3 to 5 minutes.

Serve hot OR cool and freeze in resealable plastic bags for toasting later.

 

For Syrup:

Mix corn syrup with jam, jelly or preseerves in a small saucepan.  Heat on medium heat until well blended and hot; do NOT boil.  Stir in vanilla.
